You were hoping there was a holiday just for nachos and you were right!
The only requirement for nachos is some kind of corn chip and some kind of cheese. Other than that, anything goes.
In 1943 some wives of U.S soldiers from Ft. Duncan stopped by a Piedras Negras restaurant called the Victory Club, but the place had closed for the day. A manager named Ignacio “Nacho” Anaya decided to throw a dish together for the ladies based on the remaining ingredients in the kitchen: some cheese, fried tortillas, and jalapeño peppers; and thus nachos were born. Thank you Nacho!

Cocktail Du Jour – Corn Margarita

This recipe is from The Berkshire Eagle

  • Kernels from 2 ears of corn (about 1 3/4 cups)
  • 1/2 cup fresh cilantro leaves, plus additional sprigs to garnish
  • 3/4 cup freshly squeezed lime juice
  • 1 tablespoon sugar
  • Lime wedges
  • 2 oz ounces of good tequila per serving

 

In a blender, combine the corn kernels, cilantro leaves, lime juice, and sugar. Blend until smooth. Line a mesh strainer with moistened cheesecloth, then strain the blended mixture into a pitcher to remove any solids, squeezing to extract all the liquid.

Moisten the edge of small drinking glasses with a lime wedge and dip the rims in salt. To each glass, add 2 ounces of tequila and a couple ice cubes. Top with about 2 ounces of the corn mixture. Garnish with cilantro and lime.
