Also, Arthur Guinness was born around this day in Dublin in 1725. A servant and son of a farmer, Arthur had come up with a recipe that he believed in so much that he signed a 9,000-year lease for St. James’ Gate Brewery in Dublin and started brewing Guinness Beer for the masses. The brewery is still going strong and Guinness is still one of the most successful beers in history. If you’re in Dublin today, stop by the brewery and get a Stoutie—your face printed on the beer foam on your own glass of beer.

Cocktail Du Jour – Spring IPA Sour
IPA syrups can add a pleasant complexity to several drinks. This cocktail was created by Good Drink Recipes by Collen Jeffers.
⦁ 2 oz gin or vodka
⦁ 1 oz pineapple juice
⦁ 0.5 oz freshly squeezed strained lime juice
⦁ 0.5 oz IPA simple syrup*
Combine all ingredients a cocktail shaker with ice, shake, pour, and serve. Garnish with orange blossom, or else add a dash of orange blossom water to the recipe. Still good without either if you can’t find them!
*To make a delicious IPA syrup: Combine equal parts sugar and IPA beer by weight (if you don’t have a scale you can use a cup of each, but the sweetness may vary from batch to batch). Bring the beer and sugar to a boil and reduce heat to simmer for a few minutes until the sugar dissolves, then cool in the refrigerator for a few hours.
