They say Marco Polo brought pasta back from China on the Silk Road and introduced it to Italy—his travels were in the 13th century, so if he did bring pasta, it was not a new idea.
Pasta dishes are first found in ancient Rome from the first century BCE, and there were already multiple varieties of dough-based foods from different cultures around the Mediterranean. The Talmud mentions drying pasta and boiling it in the 5th century AD. Dry spaghetti in particular was an Arab mainstay brought to Italy in the 12th century. Dried pasta was perfect for travelling as it kept for long periods and was light in weight.
Tomato sauce would have to wait for Spain’s exploration of the New World in the 16th century to find tomatoes. The Italian cookbook Lo Scalco alla Moderna (The Modern Steward) has a recipe for tomato sauce that first appeared in 1692. Today, Spaghetti with tomato sauce is one of the most well-known foods in the world with thousands of different recipes.
